Will you prefer a healthy salad over a chaat on street food?

I was out for shopping and I was very hungry to eat a low budgeted meal like some street food. And not in some cafe, but I couldn’t find anything on streets which can be considered a healthy option.

I live is north which is a hub of street food, all types of chaat is the picture that gets formed. But I was thinking if someone ever felt the need to eat some sautéed veggies, smoothies, fruit chaats or bowls while roaming on the streets??

Healthy options are usually quite expensive :')
Street food equivalent of healthy food would be a great untapped market, maybe

Be it chaats or salads, food in India not prepared by ourselves is not healthy. Almost all of the vendors don't care about the quality of the food.

Yeah but what if there was a standardisation on these products. That can make us feel confident on the quality being sold.

There would already be standardization. It's just that enforcement of it is not being done. It starts off fine, and then slips into serving bad quality food

I recently saw a reel where one person (some ex chef) was making healthy rolls with sauteed veggies. Seemed very cool and fulfilling.
This was in Delhi I guess
