Yahi sach hai. You will be trying some exotic cuisine while your mum be looking for bread toast. Not to mention most vegetarians can't stand the smell of fish/meat.
At which point you be like should have left mum at home where she is happy because I have been in the exact position

Middle Eastern countries. Having been there multiple times, I can literally vouch for huge availability of veg food items in the Middle East. SEA has the least probability of having veg items compared to EU.

You can check out UAE(Would suggest Ras Al Khaimah). Dubai is too crowded. You can visit Oman, Bahrain as well.

Wait why isnt anybody talking about Vietnam here? They have really great food when it comes to veg as well as non veg. They have Indian restaurants too, so should not be a problem if they miss home. And for you, ofcourse there’s seafood. Must visit trip. Piece of advice- start from Hanoi and end your trip in Ho chi min City(basically go from north to south) and spend the least days in ho chi min. Enjoy

Bro just came back from Hanoi. They have non-veg integrated in their foods. I always asked for chicken pho at breakfast. One day I overheard a customer say, I want only chicken. and waiter said - Just chicken? no pork?!

Bro i can share my itinerary, wherever i went, everything was available. Starting from hanoi, da nang, ho chi min everythinggg, everybody had veg food and good chicken too😅

Wherever the Gujju tourists go is a safe destination.
All the worlds major tourist traps have fairly easy availability of Indian Veg food.

In addition:

Mexico Taiwan Philippines HongKong Japan (in cities, but with prior research)

Turkey. Has amazing food suitable for vegetarians. Mediterranean cuisines

Sri Lanka, Australia ,Singapore and Dubai are good options for travel. With the increase in popularity of Indian cuisine you might not find it difficult to get veg restaurants in the EU but they will be pricey.
