Have a same guy in my office as well. He doesn’t have outlook, slack and other stuff in his phone.
This is the way forward. When you have work apps on your phone, people think you're accessible at all times.
Although I still have them in case of some issues or if I don’t miss any important meetings.
Though I find myself checking it at odd times.
I used to have office email back in 2011, I kept checking it from home and if there was work I would logon and complete it.
Deleted it after my marriage and never had since then. I am available on phone though.

I have all my work apps on my phone, but I've setup a automated scheduler which freezes/hibernates all these apps post work hours. And I've asked my TL to only ping if its a prod issue or something that needs immediate attention from my end.
