Does Global Grade matter?

Hello all, I need to know if global grades really matter if the salary hike in the switch is good enough. Example, I'm at GG11 (Senior Associate) and some banks are offering me good hikes for roles of my interest but they're "Associate" roles. Does it really matter? I have 3.5 yrs of total experience and their associate role experience is upto 5 yrs, hence according to them, that's where my experience takes me in their hierarchy.

For context, I am young for my current role in my current company too, the average experience of people in my role in my current org is close to 6-8 yrs, and I joined at this role with 1.5 yrs experience, and doing well and awaiting a promotion this year.
