Will health insurance cover for notice period?

My last day is on June, whether myself and my parents will be covered in the current financial year ?

No, your last day in the office will be the last of the coverage.

But, you can contact the insurance provider before the last day to convert it to a normal policy, but I think you have to pay the entire premium again.
