Which tech to choose for backend if you are planning to become full-stack developer from UI developer ?

I have been into UI development for almost 10 years now and planning to opt full stack development line . Which tech stack do you suggest which will be easier to learn and crack interviews ?

Should it be core programming languages like Java, C# dotnet or nodejs ?
