Whats with Uber hiking up fees after the trip ends

Had a trip last night to the station. Price was 319 while booking but when i was about to pay today, the app showed me a price of 430, until i contacted uber help and they reduced my price in an instant. What’s with this extremely dark pattern?? I wonder how many times I’ve paid for such hikes, unknowingly.
