I've secured an offer that wants me to join within 60 days.

Now here at Infosys, I've recently joined the team and I've worked for one sprint only. There's no dependency on me. Can I try persuading my DM to grant a 60 days notice period? Like what are the chances?

Definitely not possible. Its not about the dependency, its about the deliverables ownership, seems like you recently joined to the project.
Your manager, again look for another talent for the deliverables and you have to give KT for the new talent.
