I'm dealing with what feels like intense anxiety or maybe even depression, and I think I need to step away and fully focus on my mental health for a month or two.
I want to get proper treatment, but to do that, I’d likely have to quit. Is it a good idea? I'm worried that I might not be able to get a good job post break, due to little to no leverage.
What should I really do?

First take advice from doctor/ counsellor. Discuss with your people maneger to get some work load reduced, take a leave break. Then decide

What about sabbatical leave? You can go for it..you will have a job with you

How about you go see a counsellor and let them diagnose/assess whether you have anxiety or depression.
Having cared for someone diagnosed with postpartum depression I can tell, counsellors encourage you to have a routine and develop better coping mechanism to deal with stress. It may not necessarily be wise to quit so soon, as it may add another layer of financial stress on top of stress that you already have.
Start counselling over weekends and within one two or three sessions you probably be able to better assess the next steps.
