Suppose my last working day is in may, will I get my variable pay along with the fnf settlement? Also, will I get the variable pay regardless of when I resign?

You need to be employed during the variable pay payment day as per policy. Thus if your last day is on or before salary day of May you would get it. If your last working day is say 27th May but salary paid on 30th May, you would not receive it.
