Why do you have to take leave and lose encashment? Just be online and do whatever work you have. You do t have to prove anything during notice period

You can take, but you have to inform your reporting manager each time you take. Based on that the reporting manager can decide whether to adjust your last working day.

What if we have more than the number of leaves that can be encashed? Can we take those leaves?

If possible take CL only
