Which country should I apply for Schengen tourist visa to get it done at the earliest? I am planning to go to Netherlands and Sweden on 25th oct i.e. 2 months from today.

Technically needs to be your port of entry. You can’t/shouldn’t apply for a Spanish Schengen and land in Amsterdam.

I took schengen from Switzerland even when my flight was for Paris... Since it is easier to get Swiss visa for tourism than french visa

French consulate in Mumbai is really good and they actually reply to your queries. So is Austrian. Go for France or Austria irrespective of your port entry or longest stay. Give them a fake iternary with cancellable hotel bookings.
Have done this thrice and always worked. The first time was Italian embassy and they just sucked, gave my visa 2 days before travel date.

France - 2 days. Me and my wife went to Italy and France in 2017. We covered mostly Italy and were is Paris only for 2 days, but we showed that we stayed at Paris for the majority part of our trip using hotel bookings.

We applied to French consulate and got the VISA in just 2 days.
This was in 2017, not sure how things are currently.

One thing to note is to give all necessary documents along with additional documents which shows you have enough money for your trip plus additional overhead.

I took for Austria. Spent a couple of days there and then went to berlin because it was difficult to get that of Germany
