Require help regarding what to do

Have received an offer from a company and the joining date is in 3 days. However another company which is better has reached out and they have 3 rounds of interviews which I need to clear. Should I give a try for that company and ask them to schedule the interviews fast? If I get through in that org will it be okay if I say no to this company whose offer I already hold.

Join it, give interviews meanwhile, if you get in leave the first one. I assume you will be on probation during this time so its ok to leave in that time period. 3 rounds of interviews may well end up taking 2-3 weeks and even then the HR takes time to get back with an offer (if they ever do), then there’s negotiation etc, so safe to join the offer you have and continue the interview process on the side.

Is it a common practice that people leave while being on probation? I mean is it okay and not taken as a bad practice/ lead to blacklisting?

Also does one have to follow notice period while being on probation?

One bird in hand is better than two in the bush.

Think about the second offer if and when you get it. You can always leave the first company.

Take first job. Keep trying on second job. If you get it then leave if you want. I know many people who did something like that.
