On notice with offer from Capgemini initially but last week received offer from Deloitte. Want to choose Deloitte.

I had put down paper when I had received offer from Capgemini and now that last week I received offer from Deloitte have decided to go with it. There is POC from Capgemini who follows up on weekly basis asking is pre on-boarding paper work done and all. How should I tell her that I need to withdraw from Capgemini since joining Deloitte. Can someone suggest how to proceed in this scenario? And will Capgemini black list me if I don't join since I accepted their offer?
