Multiple parallel interviews

I have multiple interviews going with different companies and one company asking me to sign an offer letter. How to deal with it? Should I tell I have another interview going on? Or should I sign the offer letter? If I sign the offer letter will I be forced to work for a minimum notice period? How do people generally deal with this?
