Aren't companies already tracking us? Every day I experience more than 3 instances where I wonder how they know this. Is my phone listening to all my conversations? Aren't all YouTube videos and phone ads on point?

Exactly many times I search a keyword and see an ad in Instagram within minutes.

That is tip of the iceberg. They are listening to all the voice conversations as well. And youtube is recommending videos listening to those conversations
