Job or business

i recently moved to founders office in an internal dept transition and the work is great…. but my long standing interest in hydroponics and the goal of building something on my own is hitting hard…. one one hand i feel like quitting job to learn hydroponics and start on my own, but on the other hand the work in founder’s office seems exciting and safe both from pay and growth perspectives…. decision making has become even more harder given my current EMI for the home loan

kindly advise what to do? leave or stay?
