JavaSpringBoot vs Python n SQL

I received an offer where the tech stack is Python and SQL, while my current role is focused on Java and Spring Boot. Although the new position offers nearly double my current CTC, I only have one year of experience in Java. Should I stay in my current role or take the new one?

Techstack should be the last thing to decide between two offers unless it's some unltra niche tech that is not used anywhere else.

Java and Python both are fairly common. Also Python should be easier to pick if you know Java
