I am a PA in ADM with 1.9 years of experience. Should I learn Java Spring Boot or Node.js? Which one is better for career growth? I am currently on the bench with no openings for a PA role, so I started learning React.js. Which backend technology should I choose? Please give me your suggestions.

Do your own research. Whaterver you learn make sure to learn it well and DSA as well.

Consider learning java spring boot for better opportunities most of openings are offered for java spring boot tech stack. Also plz do your own research before taking it up.
