Also depends on your read of the interviewer, if you feel that he/she isn't technically strong, and is asking run of the mill Google based questions, you can take a chance to bluff. Calculated risk, too much honesty is also harmful

I'd bluff a few and say would learn a few ideally. Since i can't really know 100% of the stuff (too fishy?) and can't claim that I'll learn 100% of the same stuff (i would've known if by now if i say I'd learn all)

Also love this idea that if you meet 100% of the requirements of the job then you are overqualified

That's a good one! I somewhat used the same approach wherein I said I knew somewhat and can learn the rest.
