Very common practice. Many organisations delay issuing the Relieving Letter and the resignation email and the acceptance mail from your boss is treated as proof in the interim.

Had two offers. One side. Other did not.

I found one company to be very anxious and annoying. It was the HR of this company that asked. The other was an MNC. Willing to pay a lot more and rather chill.

Some companies do ask for it to be sure that you will be joining them or atleast have taken that first step towards it.

The company i joined had a policy that if i join within 45 days there would be 1.5 lakh bonus and after that its just 1 Lakh bonus. So I thought may be thats why they ask.
