If someone did everything to push you to your limit during an arranged marriage date, you would not go ahead with it even if the other person thought you passed. Do not act crazy, do not act like the right to accept or reject is only with you. And mostly - don't act like only the girl can have mental health issues.

If you want to know, tell her your opinion of mental health issues, ask her what her opinion is. Tell her how your parents think about mental health issues and ask her what her family thinks. This should be enough to give her space to discuss things if she needs to discuss them with you.

You cannot figure this out overnight. You have to understand how to dig through her words and layers without sounding like a psychiatrist. And this takes time. You need to learn to crunch all the questions to figure it out, within a week or so meeting/talking. Most of this should be in-person too.

Tattoos and body modifications, scars from self harm, hair colour that isn't subtle, substance abuse- alcohol and cigarettes included. These are the ones that are easy to spot at a distance. God forbid they have BPD or are bipolar you're going to find out the hard way. When you find out leave instead of trying to fix her. You can't. She needs professional help.

Mental health issues can be vast. But, if something triggers someone causing anxiety, if someone is aggressive without context, maybe not stable too! These are things which I have seen generally but cannot comment as each case might be different!

For figuring that out, you need to be free from any mental health issue yourself.
