How do you step back from a offer for which you have signed the document?

Can anyone tell what exactly to say to the HR when you have accepted the offer earlier, but now you want to step back and take other offer which is better? Like if we have signed the document already then how are we supposed to step back? Wont the HR say "that you have already signed the offer letter", does that mean that a signed offer letter means nothing?
