Food allowance

Anyone has any idea if we can change our food allowance and encash it or the Food allowance will be 500 only by default? Because in my compensation letter it was written as 3000 max so I'm not sure if I can change it in Bouquet of Benefits to 3000 or it will be 500 only by default.
