Employer can know who is my prev employer?
Got laid off and had to join a shitty company. If I get a job in other company, I don’t plan to mention my present company as my last working job. Is that fine? Would they by any chance track previous employer through pf or tax?

They do track from pf
It is always good to mention the truth. Imagine if someone from your current HR joins your new company, or if there are connections/friends. So, I recommend stating the reality rather than hiding it. In most cases, your new employer will thank you for sharing this.
PS: Sorry for the double comments; I don't know what happened.
It is not easy for any companies to track your employment records, but it's not impossible.
