Does it pay more to do work no one is willing to?

Most jobs out there that pay well seems to require you to work on legacy code/systems. Rarely you find cutting edge tech work with good pay as well. So is this the norm in our industry? It makes sense that companies are paying more for those positions bcoz very few would be willing to join or stay for long in this case. What do you think? Like I’ve heard people who join fang are not that employable later as they mostly have experience with internal tooling.
