Design Portfolio Prison: Confined by Work and NDAs

I've been actively searching for a new role for over a year with no success. I've applied to numerous companies offering UX positions, but haven't received any responses. After careful consideration, I've identified my non-updated design portfolio as the primary obstacle. Due to NDAs, I'm unable to showcase much of my professional work directly. Re-contextualizing these projects for my portfolio feels almost as demanding as creating entirely new ones.

This presents a significant challenge: balancing my current work responsibilities with the need to revamp my portfolio. I'm trapped in a frustrating cycle: my workload prevents me from updating my portfolio, and my non-updated portfolio hinders my job search. I need a strategy to effectively build a compelling portfolio while maintaining my current employment.
