What should be the process? Should I take any app I’d like building and building screens for them on Figma based on my design knowledge?

Yeah you can start with figma, build personas based on UX research and basic workflows like login/logout, product selection, checkout, payment, and return to home. I would suggest do the Coursera foundation in UI/ux design by Google.
