Building a linux distro from source

So far I've seen LFS/BLFS and yocto and I have built the basic minimal os using yocto.

• If you want a minimal OS with modern GUI capabilities which would be preferable.

• What kind of time would I have to invest in learning either.

• Which one would be reliable for long term security updates and maintenance
