I blame the influx on North Indians for this. Hotels have either on purpose north indianised the palette or the north indian cooks have brought in their tastes and north indianised south indian food..

What nonsense. Have you ever been to CTR? Pretty much every eatery here gives you super crispy dose. In TN you actually use the same batter as you use for making idly. It has no crispy ness at all.
